I will be visiting Hefei at the beginning of October for ten days or so.  I am a vegetarian, and wish not to eat food made with any animal/fish products, oils, etc.
Is this possible in China beyond eating steamed vegetables and tofu?

I find that a lot of the oils they use is peanut-based, so if that's the case, you are in the clear.  But to make sure, ask the server before ordering.  Some might add in animal fat for taste, but again, hopefully by you asking them to omit it, that they will comply.

For me, I have some allergies to different foods.  So when my wife and I go out to eat, we usually have a good dialogue about this with the server, and 9 times out of 10 they do a good job.

remember you are in pig station! most chinese eat pork related substance like a crack head on a 2 dollar pipe!
but if the worse comes to worse you should eat at home or if you go to a hotel check out holiday inn near bu xing jie they have foreigners who work there and many are able to comply with international table manners

you mean you eat no animal products, also no milk or eggs? r u vegan?
If you're just a regular vegetarian I think you should have no problem. If you don't speak Chinese go to Hilton or Holiday Inn... Hilton has a new Indian Kitchen which serves quite a few veggie dishes (I think).
Otherwise I have no place to recommendi. In Shanghai, however, there is the excellent Godly (gong de ling - or something like that).

They have plenty of apples and mung beans!
They sell vegetarian fish too! Cows in China are vegetarians too so maybe you could get a dish of vegetarian cow!
Oh, they had this crazy banana pizza too at Carrefour - disgusting stuff because they put cheese on it. Man where can you get a decent vegetarian banana pizza these days? They just don't make em like they used to eh!
Don't worry, China has nuts without oil and cocky seed - genuine 100% vegetarian cocky seed and they even have oranges not just apples and bananas.
You'll love it for sure!
China is a vegetarians' paradise even though it is a pig pen as Timmy says.
Make sure you don't eat the pigs cause they ain't vego's, I heard they eat just about anything. In fact, when we were kids growing up, as most kids do, our friends neighbourly farmers in hillbilly county, told us that some old grandpop collapsed in the pig's pen and they ate him so pigs definitely ain't vego's.
You can wash down the cocky seed with genuine 100% vegetarian beer or red wine too - they got it all in China.

You don’t need to worry about finding vegan restaurants in China. Due to Buddhist teaching and yoga practices there are large number of vegetarians in China. More and more Chinese people are trend to eat vegan foods to keep health and fitness.

You can easily find vegan restaurants in any city. I will list few places to try.
Beijing
-   Tian Chu Miao Xiang(First Floor, Chuangye Plaza, Tsinghua Science Park, East Gate of Tsinghua University)
-   Gong De Lin(158 Qianmen Street)
-   Lily Vegetarian(www.ertong.org)
-   Still Thoughts( HaiDian District)

Shanghai
-   Miaode Vegetarian Restaurant(Jing'an Temple, 1686 Nanjing Xilu)
-   Jing'an Temple Vegan Noodle Restaurant(Jing'an Temple, 1686 Nanjing Xilu)
